Veggie Prep

Look at those beautiful veggies! This week I decided to bring you a super simple veggie meal prep. I like roasting a bunch of veggies to have healthy options on hand to throw together meals. I highly recommend doing this each week so you can easily grab some to assemble a meal in a pinch!

This week we have asparagus, zucchini, broccoli and butternut squash.

This prep doesn't even warrant a recipe because it's that easy!!

Wash and chop your veggies how ever you would like. Spread them out on a baking sheet with parchment paper, drizzle with olive oil and whatever seasoning you would like! We really like Jane's Krazy Garlic Seasoning. Then bake in a preheated oven at 400 degrees for 25 minutes.

You may notice that the butternut squash never made it on the final pics, we had a mashed butternut squash fail! I tried making it in the instant pot but it came out watery and not worth sharing! Try roasting your butternut squash the same way as above or add a touch of maple syrup with the olive oil for a delicious sweet touch!
