Whether you want to use this filling for tacos, burritos, burrito bowls or enchiladas, you'll be sure to feel good about what you're putting in your body! We are always looking for ways to incorporate more veggies in our meals, and this one is too easy! This week we take zucchini, bell peppers and spinach, use the food processor to chop it finely and then we add it to our browned meat or meat alternative of choice. Also, with our homemade taco seasoning, you'll never need those seasoning packets again!
Ingredients:
3 zucchinis
1 bell pepper
bunch of handfuls of spinach
1lb ground turkey, chicken, beef, tofu or other meat alternative
2 packets of taco seasoning or:
2 Tbsp chili powder
2 tsp paprika
2 tsp cumin
1/2 tsp cayenne pepper
1 tsp oregano
1 tsp salt
1/2 tsp black pepper
** Other good veggies to add in are; onion, yellow squash, kale or whatever veggies you have on hand
Instructions:
Place the veggies in a food processor, and process until finely chopped.
Using a cheesecloth, drain the excess liquid. Place the veggies in a bowl to use later.
Mix together the spices and place to the side
Add oil to a pan and brown the meat until fully cooked, once cooked add in the veggies and continue to cook until veggies are softened and cooked through.
Add the spice mix to the meat and veggies and cook for 2 more minutes
It is easy as that! We will be using ours for soft tacos this week, with salsa and avocados! This week Garrett was our chef and enjoyed using his griddle again!
