Easy Weekday Baked Oatmeal and Hardboiled Eggs

Who is ready for a delicious and filling breakfast? We love breakfast in this household and make sure to never skip it. Busy mornings mean that breakfast needs to be prepped in advance, and this baked oatmeal is a staple in our household. We often make two batches on Sunday and freeze one in individual portions for mornings where we are struggling to find something quick and healthy. This recipe is easily customizable with your topping options, so have fun making your own creation! And, thanks to the instant pot for quick and easy hardboiled eggs.

Baked Oatmeal

  • 3 c. rolled oats

  • 1/4 c. brown sugar

  • 2 tsp. baking powder

  • 1 tsp. cinnamon

  • 1 tsp. salt

  • 1 c. milk

  • 1/2 c. butter, melted

  • 2 eggs, beaten

  • 1/2 c.-1 c. semi-sweet chocolate chips or any add in of choice (our favorite combo is 1/2c. chocolate chips, 1/4 c. slivered almonds and 1/4c unsweetened shredded coconut)

In a mixing bowl, combine all ingredients. Spoon into a greased 9 in. baking dish (or any similar sized baking dish). Bake at 350 degrees for 30-35 minutes or until edges are lightly browned and center is set.




Instant Pot Hardboiled Eggs


This recipe is so simple, just place desired amount of eggs in the instant pot with 1 cup of water, cook on high for 4 minutes. Let sit for 1 minute after completed, decompress the instant pot and place the eggs in an ice bath. You'll have perfectly cooked hardboiled eggs every time!
