This chicken posole meets all our criteria for a meal prep! Another favorite in our rotation is chicken posole. Posole traditionally is a rich stew made with pork, green chiles, hominy and Mexican spices. We mix things up a bit by dropping the cooking time and using pre-cooked chicken in our recipe with the help of the instant pot. Make yourself a nice bowl of this posole and enjoy with your favorite toppings.
INGREDIENTS
1 yellow onion
2 Tbsp cooking oil
2 Tbsp flour
2.5 Tbsp mild chili powder
4 oz. tomato paste
1 tsp ground cumin
1 tsp garlic powder
1/4 tsp cayenne pepper
1 tsp salt
2.75 cups water
4 cups chicken broth
2 4oz. cans chopped green chiles
2 15oz. cans hominy
2 cups shredded pork, chicken, or beef (pre-cooked)- we did our chicken in the instant pot
2 fresh limes
1 bunch fresh cilantro
Plus whatever toppings you would like- avocado, shredded cheese and cornbread are great!
INSTRUCTIONS
Finely dice the onion, then add it to a large soup pot along with the cooking oil. Sauté the onion in the oil over medium heat for 3-5 minutes, or until it is tender and transparent. Add the flour and chili powder and continue to sauté for two minutes more. The mixture will be fairly dry, so stir continuously to prevent burning. Add water, tomato paste, cumin, garlic powder, cayenne pepper, and salt to the pot. Whisk the ingredients together until the tomato paste is dissolved. Allow the mixture to come to a simmer, at which point it will thicken. Finally, add the chicken broth, shredded meat, diced chiles, and hominy (drained). Stir to combine and then heat through (about 10 minutes). Cut the lime into wedges and roughly chop the cilantro. Top each bowl with chopped cilantro and a wedge of lime to squeeze over top and whatever other toppings you would like!
