Copycat Viva Chicken Bowls



This is one of our most requested recipes that we make, and also makes a monthly appearance on our family meal prep menu! It is our take on the popular fast-casual restaurant, Viva Chicken, chicken bowl. It can be spruced up and customized however you would like! The star of the show is the Peruvian green sauce, or if you are familiar with Viva Chicken, then it is the green sauce!


The base is rice, this can be white rice, brown rice, cauliflower rice, no rice, whatever you prefer for your eating style, and then is topped with your choice of protein. Our go-to is rotisserie chicken from the grocery store, but this week we changed it up with grilled flank steak in a simple marinade. This is tasty with chicken, steak, shrimp or extra vegetables. We then top our bowls with roasted cauliflower, cherry tomatoes, sliced green onions, pickled red onions, avocado and the green sauce!


Below is the recipe for the green sauce, the only thing that really needs a recipe! Everything else you can just throw together however you would like.




INGREDIENTS

  • 1/4 cup chopped red onion

  • 2 tbsp olive oil

  • 1/2 cup mayonnaise

  • 2 tablespoons white vinegar

  • 4 teaspoons yellow mustard

  • 1/2 teaspoon kosher salt

  • 1/4 teaspoon freshly ground black pepper

  • 3 jalapeños, roughly chopped

  • 2 cups chopped fresh cilantro

  • 3 medium cloves garlic

INSTRUCTIONS

  • Sauté the onion in a small skillet with 1 teaspoon of the oil until soft, 3 to 4 minutes.

  • Transfer to the blender or food processor, then add the remaining oil, mayo, vinegar, mustard, salt and pepper.

  • Then add the chopped jalapeno, cilantro and garlic and blend on high speed until the sauce is smooth and creamy, about 30 seconds.
