Slow Cooker Turkey Meatballs



Who doesn't love a good spaghetti and meatballs meal?! This week we made our own (hidden) veggie packed tomato sauce and turkey meatballs on top of whole wheat pasta for dinner. While I just threw together the tomato sauce without writing down my recipe, I did manage to write down the turkey meatball recipe! Next time I make the tomato sauce I will be sure to write it down (fun fact- tomato sauce can hide all sorts of veggies like carrots, zucchini and cauliflower). As heads up, this recipe makes a lot of meatballs, about 40, if you don't need that many you can easily divide this recipe in half.

Ingredients:

-2lbs ground turkey (we did 99% lean)

-1c. grated parmesan

-1c. parsley, chopped

- 2/3 c. Italian breadcrumbs

-2 eggs

-1 tsp. garlic powder

-1 tsp salt

-1/2 tsp black pepper

- 10 cups tomato sauce (homemade or jarred)



Instructions

  1. Spray the bottom of your slow cooker with oil spray

  2. In a large bowl combine all the ingredients, except of tomato sauce. Mix until just combined

  3. Roll meatballs into golf ball size and place in the slow cooker (you might need to use an instant pot in slow cook mode or additional slow cooker depending on the size of your cooker, I had to use both as to not overcrowd the meatballs)

  4. Pour tomato sauce over meatballs

  5. Cover the slow cooker and cook on high for 3-4 hours, or until they are cooked through

  6. Serve with whole wheat pasta, zucchini noodles or make a meatball sub!
