Cottage Cheese and Spinach Egg Bake
This breakfast meal prep is sure to get your started off on the right foot, fueled with tons of protein, packed with spinach and not to mention, tons of flavor! This could even be used as a light lunch or dinner served with a salad. This serves about 8, so you can easily cut this recipe in half for a smaller crowd.
If you have busy mornings like us, then having breakfast ready to go is a must. On the days we don't have anything ready or planned, it can be so chaotic, so save yourself the stress and make this egg bake!
15 large eggs
1 cup cottage cheese
1 cup grated Pecorino Romano or Parmesan cheese
3 cups chopped baby spinach
Freshly ground black pepper and salt to taste (cottage cheese and parmesan are both already pretty salty)
Preheat oven to 350 degrees F.
Lightly spray an 8x8 glass dish with cooking spray.
In a medium bowl, whisk eggs, cottage cheese, Pecorino, spinach, salt and pepper, add to the dish
Bake in the oven until the top is set, 45 minutes.
Serve with salad or slice of whole grain bread
