Chicken Parmesan Meatballs

These meatballs come together super quick with just a few ingredients which makes it great for a quick meal prep or easy weeknight dinner! We served these over whole wheat pasta and homemade tomato sauce that we prepped and froze over the winter! I hope you enjoy these as much as we do.



Ingredients

  • 1/2 cup seasoned breadcrumbs

  • 1/2 cup grated Parmesan

  • 1 lb. ground chicken

  • 1 large egg

  • 2 Tbsp olive oil

Instructions

  1. Preheat the oven to 350 degrees

  2. Mix all ingredients together by hand

  3. Roll into about 1-1.5 inch balls (should make about 20 meatballs)

  4. Place meatballs on a baking sheet

  5. Bake for 10 minutes, and then flip. Continue baking for about 8-10 minutes, or until cooked through
